Nika cooks: Low Carb Pizza

Hello my loves, hope you're having all a brilliant day and had a good week so far! So today I decided to share my low carb pizza recipe. In case some of you didn't knew that I started a low carb diet two months ago, this is for you haha. So this is a really easy and delicious dish for probably any occasion.
What you need:

  • Eggs (I used four but it depends on your pan size!)
  • vegetables of your choice
  • herbs
  • mozzarella
Put the eggs in a measuring cup and whisk them together. Now you want to cut the vegetable into the size of your wish and mix them with the eggs. Put a little bit of salt & pepper in the mixture if you wish and of course the herbs.Heat up your pan with a little bit of olive oil and wait till it's heated up properly. As soon as the pan is hot, put the mixture in it, put some more vegetables on it and more herbs (only if you wish), cover the pan with a lid and let it cook on medium heat for about twenty minutes. It could be more or less, it just depens on your hotplate. As soon as it's cooked properly, just take a plastic or wooden spatula and "cut" it. And voila! It's ready to be eaten.
